White Chocolate Chunk Cookies

My husband Fred loves white chocolate. He is forever trying to sneak bars of lindt into our shopping and loves a good white chocolate biscuit or cookie. Instead of buying some expensive cookies that included white chocolate I told him id make him some. My sister and her boyfriend Ant were coming round for tea that night, so I made a good size batch and completely winged it in terms of the recipe. Im pretty sure they liked them though as they all went in a day, and I didn't get a single one.

Ingredients


  • 200g white chocolate cut into small chunks
  • 175g plain flour
  • 110g soft butter
  • 50g sugar

Method

  1. Preheat the oven to 180C/ gas 4.
  2. Put all ingredients in a bowl and mix together until all ingredients are combined.
  3. Bring the whole mixture together to form a soft lumpy dough.
  4. Split into two large ball, split each ball into 3, and then each of those balls into 2. You should have 12 small balls of dough. Arrange on a baking sheet covered in greaseproof paper.
  5. Squash balls into small cookie shapes allowing plenty of room around for them to expand.
  6. Cook in the oven for 10-15 minutes until pale golden. Dont worry if they take longer.
  7. Remove from the oven and cool on a wire rack.
